Wow did I make an incredible stew last night! Creamy Golden Cauliflower Soup! Yumm!

Well folks I am down another pound!  I still am eating wonderful healthy and tasty meals.  I made one from Joel Furhman’s “Eat to Live” recipe book last night.  Creamy Golden Cauliflower Soup!  I am doing this from memory so it should be pretty close:

2 cups of carrot juice – freshly juiced

2 carrots chopped

1 cup celery chopped

head of cauliflower rough chopped

2 leeks chopped

2 garlic cloves minced

6 cups of chopped spinach

4 cups of water

1 cup of raw cashews

3 tbs curry powder, 3 tbs chili powder, 1 tsp nutmeg, 2 tbs of no salt seasoning

I chopped the veggies and juiced the carrots and put them all into a large pot with the spices.  I brought to a boil and simmered for 15 minutes.  I then took 2/3 of the stew and put it and the raw cashews in a food processor and processed until creamy.  I then added it back to the stew.  I added the spinach and let it sit for another 10 minutes to let it wilt the spinach.  Wow oh Wow did I love it!  Lots of protein, low in fat, full of micro nutrients!  Packed full of flavor.  It was a bit of a variation to Dr Furhman’s recipe but it turned out fabulous!   I highly recommend it!
